Teriyaki Clementine Salmon Noodle Bake: A Zesty, One-Tray Wonder
A One-Tray Wonder with Sweet, Savoury, and Spicy Goodness
This easy, flavor-packed tray bake is the ultimate no-fuss dinner. It’s rich with teriyaki, bright with fresh clementine, and has just the right kick from red chili and ginger. Everything—salmon, noodles, and vegetables—cooks together in one dish, making cleanup a breeze.
Ingredients (Serves 4)
• 2 pak choi, halved
• 300g fresh medium egg noodles
• 2 handfuls ready-made stir-fry vegetables (I use a Sainsbury’s stir-fry pack)
• 1 handful mangetout beans
• 1 handful baby corn
• ½ side of salmon
• 1 clementine, sliced
• 2 spring onions, sliced (for garnish)
• 1 tsp sesame seeds (for garnish)
• 1 fresh red chili, finely chopped (for garnish)
For the sauce:
• 4 tbsp thick teriyaki sauce
• 2 tbsp soy sauce
• 1-inch piece fresh ginger, finely chopped
• 3 cloves garlic, finely chopped
• 1 fresh red chili, finely chopped
• 1/2 tsp Chinese five-spice
• 2 tbsp honey
• Zest and juice of 1 clementine
Method
1. Preheat the oven to 200°C fan (220°C conventional).
2. Assemble the base: Lay the pak choi, cut side up, in a large roasting dish. Scatter over the egg noodles, stir-fry vegetables, mangetout beans, and baby corn.
3. Make the sauce: In a bowl, mix together the teriyaki sauce, soy sauce, ginger, garlic, chili, Chinese five-spice, honey, and the zest and juice of a clementine.
4. Coat the vegetables: Pour half of the sauce over the vegetables and noodles, tossing gently to coat.
5. Add the salmon: Place the half side of salmon on top of the noodle and vegetable mixture, then pour the remaining sauce over the salmon.
6. Add the clementines: Arrange the sliced clementine around the salmon for extra flavor.
7. Bake: Cover the dish with foil and bake for 45–50 minutes, removing the foil for the last 10–15 minutes to allow the salmon to caramelize.
8. Garnish and serve: Scatter over sliced spring onions, sesame seeds, and extra chopped red chili before serving.
