A favourite easy lunch – comforting, full of flavour, and all done on one tray.
This is one of those recipes I come back to again and again. It’s simple, quick, and packed with sweet, spicy, and savoury flavour — with barely any effort. I usually make this for lunch when I want something satisfying but don’t want to spend ages in the kitchen. Everything gets mixed together, baked for 30 minutes, and it always turns out delicious.
Ingredients:
• 3 higher-welfare chicken breasts, cut into bite-sized cubes
• 1 block of halloumi, cubed
• 1 bag of Mediterranean vegetables (I use the one from Marks & Spencer – it has red onions, courgettes, and peppers)
• 1 heaped tablespoon of rose harissa paste
• 2 cloves of garlic, grated
• 1 small red chilli, finely chopped (optional)
• Salt and black pepper
• A generous drizzle of honey
• A little olive oil
• Fresh parsley, finely chopped (to serve)
• Optional: more honey to drizzle when serving, if you like extra sweetness
Method:
1. Preheat your oven to 200°C fan.
2. In a large bowl, mix together the chicken, halloumi, Mediterranean veg, harissa paste, garlic, chilli (if using), salt, pepper, a generous drizzle of honey, and a little olive oil.
3. Toss everything until well coated, then spread it out in an even layer on a large baking tray.
4. Bake for 30 minutes, until the chicken is cooked through, the halloumi is golden, and the veg is soft and caramelised at the edges.
5. Once out of the oven, scatter over some freshly chopped parsley.
6. Plate it up and, if you like things a little sweeter, drizzle over a touch more honey before serving.
